the first: blue cheese crackers. i've tried this recipe before, but with a combination of mozzarella and cheddar cheeses. the blue cheese ones were ten times better, but i think that's because of the sharp flavor, as well as my better measuring skills. (sometimes i get a little haphazard with my estimations when i'm trying out a recipe for the first time.) if you love cheeze-its, these are certainly worth a try. the recipe is here. SUPER easy, and way better for you than the processed and preserved kind i'm sure.
the second: carrot cake cookies. i had some leftover cream cheese icing from the carrot cake i made for jacqui's bridal shower last weekend, and a while back i had found a recipe for carrot cake cookies. perfect combination, so i decided to give it a try. my roommates especially loved them, and they were gone within 48 hours.
the third: whole wheat cinnamon bagels. i've always wanted to try making bagels, the whole process of boiling bread has always been intriguing to me. i settled on a recipe from smitten kitchen, one of my favorite food bloggers.

after adding the rest of the ingredients and kneading, i poked the holes.
you let them rise for 20 more minutes, then see if they past the "float test." if they fail, like the sad one above, you let them rise some more.
passed the swim test. now, the tray goes into the fridge for the flavor to develop, anywhere from 3 to 48 hours. i left mine for 24. then you boil them, 1 minute on each side, then bake 10 minutes.
after that, i brushed butter on them and sprinkled on cinnamon and sugar.
and you end up with these beauties!
they look kind of like donuts.

i also wanted to try making homemade peppermint patties, as well as blondies made with a white bean base. another time though, a gal can only play in the kitchen for so long in one day before she has to get some real things done too.
